Ingredients

Scale

Main Ingredients

  • 6 large Russet Potatoes, peeled and diced into bite-sized chunks
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 6 slices Bacon, cooked crisp and chopped (reserve some for garnish)
  • 4 cups Chicken or Vegetable Broth
  • 1 cup Sharp Cheddar Cheese, shredded
  • 1 cup Heavy Cream or Half-and-Half
  • ½ cup Sour Cream
  • Salt, to taste
  • Black Pepper, to taste

Garnishes

  • Reserved crispy Bacon bits
  • Chopped Chives or Green Onions
  • Additional shredded Cheddar Cheese
  • Dollop of Sour Cream

Instructions

  1. Prepare Your Ingredients: Peel and dice the russet potatoes into bite-sized pieces to ensure even cooking. Chop the onions and garlic. Cook the bacon separately until crispy, reserving a few slices for garnish.
  2. Load the Slow Cooker: Combine diced potatoes, sautéed onions and garlic (optionally sautéed in bacon fat for extra flavor), cooked bacon (except reserved garnish), broth, salt, and pepper into the slow cooker. Stir gently to blend the ingredients.
  3. Slow Cook to Perfection: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender and flavors have melded.
  4. Blend and Enrich: Using an immersion blender, partially blend the soup to your preferred consistency, leaving some potato chunks for texture. Stir in the heavy cream and sour cream and let the soup thicken into a creamy texture.
  5. Add Cheese and Final Touches: Fold in shredded cheddar cheese while the soup is still warm to melt it evenly. Adjust salt and pepper as needed. Serve hot topped with reserved crispy bacon, chopped chives, extra cheese, and a dollop of sour cream to complete the loaded baked potato experience.

Notes

  • Use starchy Russet potatoes for a creamy soup base.
  • Cook bacon separately and reserve some for garnish to intensify smoky flavor.
  • Partially blending the soup allows a delightful mix of creamy and chunky textures.
  • Grate your own cheese for better melting and creaminess.
  • Sauté onions and garlic in bacon fat before adding to the slow cooker for deeper flavor.
