Mediterranean Spinach and Feta Crisps

Mediterranean Spinach and Feta Crisps are a delightful savory snack or appetizer featuring fresh spinach, tangy feta cheese, and crispy phyllo dough or puff pastry baked to golden perfection. These bite-sized crisps combine vibrant Mediterranean flavors with a satisfying crunch, ideal for healthy snacking, elegant parties, or anytime indulgence.

Ingredients

Main Ingredients

  • Fresh Spinach – 2 cups, finely chopped
  • Feta Cheese – 1 cup, crumbled
  • Phyllo Dough or Puff Pastry – 8 sheets or equivalent dough
  • Olive Oil – 3 tablespoons, for brushing and sautéing
  • Garlic Powder – 1/2 teaspoon
  • Onion Powder – 1/2 teaspoon
  • Lemon Zest (optional) – 1 teaspoon
  • Black Pepper – 1/4 teaspoon
  • Sea Salt – 1/2 teaspoon or to taste

Instructions

  1. Prepare the Spinach Filling: Finely chop the fresh spinach and sauté in 1 tablespoon of olive oil over medium heat until wilted and tender, about 2-3 minutes. Remove from heat and allow to cool slightly. In a bowl, combine the cooled spinach with crumbled feta cheese, garlic powder, onion powder, lemon zest if using, salt, and pepper. Mix well to form a flavorful filling.
  2. Prepare the Dough: Lay out sheets of phyllo dough or puff pastry on a clean surface. If using phyllo, brush each sheet lightly with olive oil and layer 3 to 4 sheets together to enhance crispiness and flakiness.
  3. Assemble the Crisps: Cut the layered dough into small squares or rounds, about 2 to 3 inches each. Spoon a modest amount of the spinach and feta filling onto each piece. Fold corners or edges over the filling to create neat packets, pressing gently to seal and avoid leaking.
  4. Bake to Perfection: Preheat the oven to 375°F (190°C). Place the assembled crisps on a parchment-lined baking sheet. Bake for 15-20 minutes until they turn golden brown and crispy. Monitor closely to prevent burning, especially with phyllo dough.
  5. Cool and Serve: Remove the crisps from the oven and transfer to a wire rack to cool slightly. This resting time enhances their crisp texture and allows flavors to meld perfectly. Serve warm or at room temperature.

Notes

  • Use fresh spinach rather than frozen for best texture and flavor.
  • Do not overfill the crisps to prevent sogginess and ensure crispiness.
  • Brush olive oil generously on each phyllo layer for a golden, evenly baked finish.
  • Cut dough pieces uniformly so they bake evenly.
  • Check crisps around 15 minutes to avoid overbaking, which can dry the filling.
