Instructions

  1. Prepare the Potatoes: Wash and cut baby potatoes into halves or quarters to ensure even cooking. Place them in boiling salted water and parboil for 8-10 minutes, until just tender but still holding their shape.
  2. Sear the Steak Bites: Pat the steak cubes dry with paper towels to promote a good sear. Season with salt and pepper. Heat a skillet over medium-high heat and add olive oil. Sear the steak bites until browned on all sides but still tender inside, about 2-3 minutes per side. Remove the steak from the skillet and set aside.
  3. Crisp the Potatoes: In the same skillet, add more olive oil if needed. Add the parboiled potatoes and sauté, turning frequently, until golden and crispy on the outside, about 8-10 minutes.
  4. Make the Garlic Butter Sauce: Reduce the heat to medium-low. Add the butter and minced garlic to the potatoes. Cook until the butter is melted, bubbly, and fragrant, coating the potatoes evenly.
  5. Combine and Finish: Return the steak bites to the skillet with the potatoes and garlic butter. Toss gently to coat everything in the sauce. Sprinkle with chopped fresh herbs and adjust the seasoning with salt and pepper. Serve immediately.
