Instructions

  1. Preheat and Prepare: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easy.
  2. Mix Dry Ingredients: In a large bowl, combine rolled oats, whole wheat flour, ground cinnamon, and baking powder. Stir these together so every spoonful has even flavor and rise.
  3. Whisk Wet Ingredients: In a separate bowl, beat eggs (or flax eggs) with your natural sweetener, melted coconut or olive oil, and vanilla extract until smooth and shiny.
  4. Combine and Add Extras: Pour the wet mixture into the dry ingredients and stir until fully combined. Fold in any nuts, seeds, dried fruit, chocolate chips, or protein powder you’ve decided to include.
  5. Shape and Bake: Use a tablespoon or cookie scoop to drop dollops of dough onto the lined baking sheet, spacing them evenly. Bake for 12-15 minutes until the edges look golden and the centers are set but soft.
  6. Cool and Enjoy: Allow the cookies to cool on the tray for 5 minutes before transferring to a wire rack to cool completely. This helps them firm up without becoming dry.
