Ingredients

Scale

Onions

  • 2 large sweet or yellow onions

Batter

  • 1 cup all-purpose flour (or gluten-free flour blend for gluten-free option)
  • ½ cup cornstarch
  • 1 tsp baking powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 large egg (or flax egg/aquafaba for vegan adaptation)
  • ¾ cup cold sparkling water (or cold lager/ale for beer batter variation)

For frying

  • Vegetable oil or canola oil (for frying, enough to fill frying pot)

Instructions

  1. Slice the Onions Evenly: Peel the onions and slice into ¼ inch thick rings, ensuring even thickness for uniform cooking and texture.
  2. Prepare the Batter: In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper. Add the egg and stir to combine, then slowly whisk in the cold sparkling water until the batter is smooth and slightly thick but not runny. The carbonation will help create a light, crispy coating.
  3. Preheat Oil for Frying: Heat oil in a deep fryer or heavy pot to 350°F (175°C). Maintaining this temperature is essential to achieve crispy onion rings without excess oil absorption.
  4. Coat the Onion Rings: Dip each onion ring into the batter, letting excess drip off. For extra crispness, dredge the battered rings in flour once more before frying.
  5. Fry in Batches: Carefully add the coated onion rings to the hot oil in small batches. Fry for 2–3 minutes or until golden brown and crispy, flipping once if necessary to ensure even color.
  6. Drain and Season: Remove the fried onion rings with a slotted spoon and place on paper towels to drain excess oil. Immediately season with a pinch of salt to enhance flavor.

Notes

  • Use cold sparkling water to keep the batter airy and light.
  • Avoid overcrowding the fryer to maintain oil temperature and crispiness.
  • Pat onions dry before dipping to help the batter stick better.
  • Use a kitchen thermometer to monitor and maintain consistent frying temperature.
  • For extra crunch, double coat the onion rings by dipping twice or adding a flour dredge after batter.
