Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon butter

Sauce

  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 cup fresh spinach leaves

Instructions

  1. Prepare and Sear the Chicken: Season the chicken breasts evenly with salt, pepper, and Italian seasoning. Heat olive oil and butter together in a large skillet over medium-high heat. Sear the chicken breasts for about 3 to 4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside, keeping it warm.
  2. Sauté Garlic and Sun-Dried Tomatoes: Reduce the heat to medium. Add the minced garlic to the same skillet and cook for about 30 seconds until fragrant. Stir in the chopped sun-dried tomatoes to release their rich flavors and infuse the base of the sauce.
  3. Create the Creamy Parmesan Sauce: Pour the heavy cream into the skillet and bring it to a gentle simmer. Gradually add the freshly grated Parmesan cheese, stirring constantly until melted and combined, forming a smooth and silky sauce. Season with salt, pepper, Italian seasoning, and red pepper flakes to taste.
  4. Add the Spinach and Finish: Add the fresh spinach leaves to the sauce and cook until wilted, about 1 to 2 minutes. Return the cooked chicken breasts to the skillet, spoon the creamy sauce over them, and allow everything to gently meld together for a couple of minutes before serving.

Notes

  • Use freshly grated Parmesan cheese for the best flavor and meltability.
  • Do not overcook the chicken; remove it from heat as soon as it is cooked through to keep it juicy and tender.
  • To enhance flavor, deglaze the pan with a splash of chicken broth or white wine before adding the cream.
  • Simmer the sauce gently on low heat to avoid curdling and ensure a smooth texture.
  • If the sauce is too thick, add a splash of milk to achieve the desired consistency.
