  • 1 tablespoon lemon juice

Instructions

  1. Prepare the strawberry puree: Wash and hull the fresh strawberries. Blend them into a smooth puree. Add lemon juice and sugar to balance the flavor. Gently heat the mixture if necessary to dissolve the sugar completely.
  2. Soften gelatin: Sprinkle gelatin powder over cold water and let it bloom for a few minutes. Then gently melt it without boiling to ensure it blends evenly into your puree. Use agar-agar according to package instructions if vegan.
  3. Melt white chocolate: Using a double boiler or microwave in short intervals, melt the white chocolate until smooth and creamy. Be careful not to overheat or scorch it.
  4. Whip the cream: Chill a mixing bowl and beat the heavy cream until soft peaks form to create a light, airy texture.
  5. Combine ingredients: Mix the warmed strawberry puree with the melted gelatin, then gently fold this mixture into the melted white chocolate. Finally, fold in the whipped cream carefully to retain volume and keep the mousse light and fluffy.
  6. Mold and chill: Pour the mousse mixture into silicone dome molds or small ramekins. Refrigerate for at least 4 hours or overnight until fully set and firm.
  7. Unmold and serve: Carefully remove the mousse domes from the molds. If needed, dip briefly in warm water to loosen. Place on serving plates ready for garnishing.
