Wedding Potatoes

Wedding Potatoes are a creamy, cheesy casserole featuring tender potatoes blended with rich cheeses and a crunchy topping. This comforting classic is perfect for celebrations, holidays, and cozy family dinners, offering melt-in-your-mouth textures combined with a satisfying crisp finish. Easy to make ahead and customizable, it’s a crowd-pleasing side that pairs beautifully with roasted meats or fresh vegetables.

Ingredients

Scale

Potatoes

  • 4 cups diced russet or red potatoes (or 4 cups frozen shredded hash browns, thawed)

Creamy Base

  • 1 cup sour cream
  • 1/2 cup milk or cream
  • 2 cups shredded cheddar cheese (sharp or mild)
  • 1 packet (about 1 oz) dry onion soup mix

Topping

  • 1 cup crunchy topping (crushed Ritz crackers, fried onions, or breadcrumbs)
  • 3 tablespoons butter, melted (for topping and greasing dish)

Instructions

  1. Prepare Potatoes: Peel and dice potatoes or thaw frozen shredded hash browns. Parboil diced potatoes until just tender (about 5-7 minutes) or squeeze excess moisture from shredded potatoes to prevent sogginess.
  2. Mix the Creamy Base: In a large bowl, combine sour cream, milk or cream, shredded cheddar cheese, and dry onion soup mix. Stir well to create a smooth, tangy mixture.
  3. Combine Potatoes and Creamy Mixture: Gently fold the prepared potatoes into the creamy mixture, ensuring each piece is fully coated for maximum flavor and creaminess.
  4. Assemble and Add Topping: Grease a baking dish with some melted butter. Transfer the potato mixture to the dish, smoothing the top evenly. Toss the crunchy topping with melted butter and sprinkle it evenly over the casserole.
  5. Bake Until Golden and Bubbly: Bake in a preheated oven at 350°F (175°C) for 45 to 60 minutes, until the top is golden brown and the casserole is bubbly around the edges. Let rest briefly before serving.

Notes

  • Use freshly shredded cheese for better melting and creamier texture.
  • Drain excess liquid from potatoes thoroughly to avoid a watery casserole.
  • Mix crunchy toppings with melted butter before sprinkling for a golden, crispy crust.
  • Watch the casserole near the end of baking to prevent overbaking; potatoes should be soft and topping crisp.
  • Customize with add-ins like chopped chives, parsley, cooked bacon bits, or jalapeños for extra flavor.
