  • 1/4 cup (60ml) light corn syrup
  • 1/2 cup (150g) sweetened condensed milk

Chocolate Topping

  • 1 1/2 cups (270g) semi-sweet chocolate chips

Instructions

  1. Prepare the Cookie Base: Start by creaming softened butter and granulated sugar together until the mixture is light and fluffy. Add the vanilla extract, then mix in the all-purpose flour and salt until a soft dough forms. Press the dough evenly into a lined baking tray and bake in a preheated oven at 350°F (175°C) for about 15 minutes or until golden brown and crisp. This forms the crunchy foundation for your caramel layer.
  2. Make the 6-Minute Caramel: While the cookie base cools slightly, combine granulated sugar, light corn syrup, and sweetened condensed milk in a saucepan. Cook the mixture over medium heat, stirring constantly until it bubbles and thickens to a luscious golden caramel consistency—usually about 6 minutes. The corn syrup prevents crystallization and ensures smoothness.
  3. Spread the Caramel Layer: Immediately pour the hot caramel over the baked cookie base and gently spread it into an even layer. Allow the caramel to set at room temperature for about 10 minutes, creating a gooey but stable center.
  4. Add the Chocolate Topping: Melt the semi-sweet chocolate chips gently using a microwave or double boiler. Once melted, pour the chocolate evenly over the caramel layer and smooth it out. Place the tray in the refrigerator to chill until the chocolate hardens, locking in the layers.
