Instructions

  1. Prepare the Chicken: Cut chicken breasts into bite-sized pieces or thin strips. Season with salt and pepper, then lightly sauté in butter over medium heat until golden and just cooked through. Set aside and keep warm.
  2. Sauté the Vegetables: In the same pan, add diced onions and sliced mushrooms. Cook until soft and fragrant, about 5 minutes. Add minced garlic during the last minute to enhance aroma without burning.
  3. Make the Creamy Sauce: Sprinkle flour over the vegetables and stir to combine, forming a roux. Slowly whisk in chicken broth and heavy cream, stirring until the mixture thickens smoothly. Season with salt, pepper, and fresh thyme, then remove from heat.
  4. Combine and Assemble: Mix the cooked chicken back into the creamy sauce, then pour everything into a greased casserole dish. Top generously with shredded Swiss cheese and, if desired, sprinkle with panko breadcrumbs for a crunchy finish.
