Strawberry Tiramisu is a refreshing and indulgent twist on the classic Italian dessert, combining layers of rich mascarpone cream with the bright, natural sweetness of fresh strawberries. This easy-to-make dessert features airy mascarpone and whipped cream filling, strawberry syrup-soaked ladyfingers, and fresh strawberry slices, perfect for any occasion from casual dinners to special celebrations.

Ingredients

Strawberry Syrup

  • Fresh Strawberries – about 3 cups, divided
  • Sugar – 1/2 cup for syrup + 2 tbsp for cream (adjust to taste)
  • Lemon Juice – 1 tbsp

Cream Filling

  • Mascarpone Cheese – 1 cup
  • Heavy Cream – 1 cup, whipped
  • Vanilla Extract – 1 tsp

Assembly

  • Ladyfingers – 20-24 pieces
  • Fresh Strawberries (sliced) – 1 1/2 cups for layering and garnish

Instructions

  1. Prepare the Strawberry Syrup: Start by washing and hulling your fresh strawberries. Slice about half of them and set aside for layering later. In a saucepan, combine the remaining strawberries with 1/2 cup sugar and lemon juice. Simmer gently until the fruit softens and releases juice, then blend briefly to create a smooth syrup. Let this cool completely before using.
  2. Whip the Cream and Mascarpone: In a chilled bowl, whip the heavy cream with vanilla extract and 2 tablespoons sugar until soft peaks form. In a separate bowl, gently stir the mascarpone to loosen it, then fold the whipped cream carefully into the mascarpone, maintaining a light, fluffy texture for the creamy filling.
  3. Dip the Ladyfingers: Quickly dip each ladyfinger into the cooled strawberry syrup, making sure they absorb moisture but don’t become soggy. Lay a single layer of these soaked ladyfingers at the bottom of your serving dish or individual glasses.
  4. Assemble the Layers: Spread half of the mascarpone cream evenly over the ladyfingers. Add a layer of sliced strawberries on top, then repeat the process with another soaked ladyfinger layer and the remaining cream. Finish with a few strawberry slices on top for decoration.
  5. Chill and Set: Cover your tiramisu with plastic wrap and refrigerate for at least 4 hours, or overnight if possible. This chilling time allows the flavors to meld and the texture to set perfectly.
