Cookie Dough

- Roll and Cut: Lightly flour a surface and roll out the dough to about 1/4-inch thickness. Using a rectangular cookie cutter, cut shapes about the size of classic pop tarts, making pairs for the top and bottom layers.
- Add Filling and Assemble: Place half of the rectangles on a parchment-lined baking sheet. Spoon a small amount of strawberry jam onto the center of each, leaving edges clear. Brush edges with beaten egg, top with the matching rectangle, and press edges gently with a fork to seal.
- Bake Until Golden: Bake at 350°F (175°C) for 12 to 15 minutes, until edges turn golden and cookies look set. Remove and cool completely on a wire rack.
