Filling and Glaze

  • 1 cup powdered sugar
  • 23 tablespoons milk

Instructions

  1. Prepare the Dough: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg and vanilla extract until combined. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet, mixing gently until a smooth dough forms.
  2. Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm up the dough, making it easier to roll and cut.
  3. Roll and Cut: Lightly flour a surface and roll out the dough to about 1/4-inch thickness. Using a rectangular cookie cutter, cut shapes about the size of classic pop tarts, making pairs for the top and bottom layers.
  4. Add Filling and Assemble: Place half of the rectangles on a parchment-lined baking sheet. Spoon a small amount of strawberry jam onto the center of each, leaving edges clear. Brush edges with beaten egg, top with the matching rectangle, and press edges gently with a fork to seal.
  5. Bake Until Golden: Bake at 350°F (175°C) for 12 to 15 minutes, until edges turn golden and cookies look set. Remove and cool completely on a wire rack.
  6. Glaze and Decorate: Mix powdered sugar with a splash of milk to make a smooth glaze. Drizzle over cooled cookies and optionally sprinkle colored sugar or crushed nuts on top.
