Ingredients

Protein

  • Chicken breast (boneless, skinless) – 1 lb (about 2 breasts)

Sauce

  • Garlic cloves – 4 large, finely minced
  • Soy sauce – 1/4 cup
  • Honey or brown sugar – 2 tbsp
  • Sesame oil – 1 tbsp
  • Rice vinegar – 1 tbsp

Noodles & Cooking Oil

  • Egg noodles or preferred pasta – 8 oz
  • Vegetable oil – 2 tbsp (for sautéing)

Garnish

  • Green onions – 2 stalks, thinly sliced
  • Optional: toasted sesame seeds or chopped cilantro for garnish

Instructions

  1. Prepare the Chicken: Slice the chicken breast into thin strips for quick and even cooking. Lightly season with salt and pepper. Heat vegetable oil in a pan over medium-high heat, then cook the chicken until golden brown and cooked through, about 5-7 minutes. Remove from pan and set aside, keeping warm.
  2. Make the Garlic Sauce: In the same pan, add a little more vegetable oil if needed. Sauté the finely minced garlic until fragrant but not burnt, about 30 seconds. In a small bowl, mix together soy sauce, honey or brown sugar, sesame oil, and rice vinegar. Pour this mixture into the pan and simmer gently, stirring occasionally, until the sauce thickens slightly, about 2-3 minutes.
  3. Cook the Noodles: Boil egg noodles or your chosen pasta according to package instructions until al dente. Drain and reserve a small amount of pasta water to adjust sauce consistency if needed.
  4. Combine Everything: Return the cooked chicken to the pan with the garlic sauce. Add the cooked noodles and toss well to combine. If the sauce is too thick, add a splash of the reserved pasta water to achieve a sticky, glossy consistency. Toss until every strand is coated in the sauce.
  5. Garnish and Serve: Transfer the noodles and chicken to serving bowls. Garnish with freshly sliced green onions and optional toasted sesame seeds or chopped cilantro. Serve immediately while warm and sticky.

Notes

  • Use fresh garlic for best flavor and to avoid bitterness.
  • Do not overcook noodles; slightly firm noodles hold sauce better.
  • Keep the pan hot when cooking chicken to lock in juices.
  • Taste the sauce before mixing with noodles; adjust sweetness or saltiness as desired.
  • Reserve pasta water to thin sauce if it becomes too thick.
