Cheese Queso

  • 1 cup creamy queso cheese sauce (e.g. Velveeta or cheddar/Monterey Jack blend)

  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Prepare the Steak: Season the steak with salt, pepper, and chili powder. Heat olive oil in a skillet over medium-high heat. Sear the steak for 3-4 minutes on each side for medium-rare or until your preferred doneness is reached. Remove from the skillet and let rest before slicing thinly against the grain.
  2. Sauté the Vegetables: In the same skillet, add more olive oil if necessary. Add diced onions, bell peppers, and garlic. Cook over medium heat for about 5 minutes until softened and fragrant, scraping up any browned bits left from the steak for extra flavor.
  3. Cook the Rice: Add uncooked rice to the skillet with the sautéed vegetables, stirring to coat the rice with oil and flavors. Pour in the beef broth and season lightly with salt and chili powder. Bring to a simmer, cover, and cook according to the rice package instructions (about 15-18 minutes), until liquid is absorbed and rice is tender.
  4. Combine with Queso and Steak: Once the rice is cooked, gently stir in the warm queso cheese sauce until creamy and well combined. Fold in the sliced steak gently to keep it tender and juicy. Let the dish rest for a couple of minutes before serving.
