Instructions

  1. Prepare Your Ingredients: Remove steaks and lobster tails from the refrigerator and bring to room temperature for about 30 minutes to promote even cooking. Mince garlic and finely chop fresh herbs. Preheat oven to 425°F (220°C) for lobster roasting.
  2. Season the Steak: Generously season both sides of the steak with sea salt and freshly ground black pepper. Pat the seasonings into the meat to help form a flavorful crust during searing.
  3. Sear the Steak: Heat a cast-iron skillet over high heat and add olive oil. When the oil is shimmering, place the steak in the skillet and sear each side for 2-3 minutes until a golden-brown crust forms. Add whole garlic cloves and sprigs of rosemary and thyme to the pan for aromatic basting.
  4. Cook the Lobster Tails: Using kitchen shears, cut lengthwise through the lobster shells to expose the meat. Brush lobster meat with melted butter mixed with minced garlic. Place lobster tails on a baking tray and roast in the preheated oven for 8-10 minutes until opaque and tender.
  5. Finish the Steak: Reduce heat to medium. Add butter to the skillet and spoon melted butter repeatedly over the steak to enhance juiciness. Continue cooking to your preferred doneness (medium-rare typically requires an additional 2-3 minutes).
  6. Rest and Serve: Remove steak and lobster tails from heat. Let the steak rest for 5-7 minutes to retain its juices. Serve steak alongside lobster tails, with a squeeze of fresh lemon juice and a drizzle of remaining garlic herb butter. Garnish with lemon wedges and optional chopped herbs.
