Ingredients

Scale

Salad

  • 1 lb fresh Brussels sprouts, trimmed and shaved thinly

Maple Dressing

  • 3 tablespoons maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 3 tablespoons olive oil

Optional Add-Ins

  • Toasted nuts (almonds, pecans, or walnuts)
  • Dried cranberries
  • Parmesan cheese or crumbled feta/goat cheese

Instructions

  1. Prepare the Brussels Sprouts: Trim the stem ends and remove any yellow outer leaves from the Brussels sprouts. Using a sharp knife or mandoline, shave the sprouts thinly into ribbons for a tender and easy-to-eat salad.
  2. Whisk the Maple Dressing: In a small bowl, combine the maple syrup, apple cider vinegar, Dijon mustard, salt, and pepper. Slowly whisk in the olive oil until the dressing is smooth and slightly thickened. Taste and adjust seasoning as desired.
  3. Toss and Combine: Place the shaved Brussels sprouts in a large bowl and drizzle the maple dressing on top. Toss thoroughly to ensure all sprouts are evenly coated. Let the salad rest for at least 5 minutes to allow flavors to meld.
  4. Add Optional Toppings: Just before serving, sprinkle toasted nuts, dried cranberries, or cheese over the salad to add extra texture and flavor layers.

Notes

  • Use fresh Brussels sprouts for the best sweetness and ease of shaving.
  • A mandoline slicer helps create uniform thin ribbons.
  • Allow the salad to sit for a few minutes to soften the sprouts slightly and enhance flavors.
  • Lightly toast nuts before adding to boost crunch and flavor.
  • Adjust the amount of maple syrup and vinegar to balance sweetness and acidity according to your taste.
  • The salad is best enjoyed within 2 hours of tossing at room temperature or chilled.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days and toss again before serving.
