Ingredients

Scale

For the Filling

  • 3 large sweet onions, thinly sliced
  • 2 tablespoons butter
  • 300g high-quality pork sausage (or preferred sausage type)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (optional)
  • Salt and pepper, to taste

For the Pastry

  • 1 sheet ready-made puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Optional Additions

  • Grated Gruyère or Swiss cheese (to taste)
  • Chili flakes, smoked paprika or mustard (to taste)
  • Fresh herbs such as rosemary, sage, or tarragon (alternative to thyme)

Instructions

  1. Caramelize the Onions: Thinly slice the sweet onions and cook them slowly in the butter over low heat until they become golden brown and soft, releasing their natural sugars. This process creates a rich, buttery base for the rolls.
  2. Prepare the Sausage Filling: While the onions cook, brown the sausage in a pan, breaking it into small pieces as it cooks. Once browned, combine the sausage with the caramelized onions, minced garlic, fresh thyme (if using), and season with salt and pepper to taste, mixing all flavors thoroughly.
  3. Assemble the Rolls: On a lightly floured surface, unroll the puff pastry sheet and cut it into strips. Spoon the sausage and onion mixture down the center of each strip, adding optional cheese or spices if desired. Carefully roll the pastry over the filling and seal the edges gently, keeping the layers intact.
  4. Brush and Bake: Brush each roll generously with the beaten egg wash to achieve a shiny, golden crust. Place the rolls on a baking tray lined with parchment paper and bake in a preheated oven at 200°C (400°F) for 20-25 minutes or until the pastry is puffed and golden brown.

Notes

  • Patience with onions: Slowly caramelize for richest flavor.
  • Don’t overfill the rolls to maintain shape.
  • Chill assembled rolls briefly before baking for better puff pastry rise.
  • Keep puff pastry cold until assembly for maximum flakiness.
  • For a deeper golden color, add a splash of milk or cream to the egg wash.
