SAUSAGE AND RICE SKILLET

  • 1 can (14.5 oz) diced tomatoes with juices

  • 12 tbsp olive oil
  • Salt, to taste

Instructions

  1. Brown the Sausage: Heat olive oil in a large skillet over medium heat. Add sliced or crumbled sausage and cook until browned and cooked through, about 5-7 minutes. Remove the sausage and set aside, leaving the flavorful drippings in the pan.
  2. Sauté the Vegetables: In the same skillet, add diced onions and bell peppers. Cook until softened and starting to caramelize, around 4-5 minutes. Stir in minced garlic and cook for an additional 30 seconds to release the aroma.
  3. Cook the Rice: Pour in the uncooked rice and stir to coat it evenly with the oil and vegetables. Add chicken broth and diced tomatoes with their juices, then return the browned sausage to the skillet. Stir everything to combine and bring to a simmer.
  4. Simmer Until Tender: Cover the skillet with a lid and reduce heat to low. Let everything cook gently for about 18-20 minutes or until the rice is tender and has absorbed all the liquid. Avoid lifting the lid to keep steam trapped for perfect cooking.
  5. Final Seasoning and Serve: Remove the skillet from heat. Taste and adjust seasoning with salt and pepper as needed. Fluff the rice gently with a fork and serve warm, straight from the skillet for a rustic and comforting presentation.
