Instructions

  1. Prepare the Spinach: Sauté the fresh spinach with a little olive oil, minced garlic, and finely chopped onion until wilted and fragrant. Drain any excess moisture thoroughly to avoid a watery filling.
  2. Mix the Filling: In a large bowl, whisk together ricotta cheese, eggs, milk or cream, grated Parmesan, salt, and pepper. Gently fold in the cooled spinach mixture until evenly combined, taking care not to overmix.
  3. Prepare the Crust: Line a 9-inch pie dish with the pie crust, pressing it into the edges and trimming any excess. For an extra flaky base, pre-bake the crust at 375°F (190°C) for about 8 minutes until lightly golden.
  4. Assemble and Bake: Pour the ricotta-spinach mixture into the prepared crust, spreading evenly. Bake at 350°F (175°C) for 35-45 minutes until the filling is set and the top is lightly golden. Allow to cool slightly before slicing to maintain structure.
