Streusel Topping

  • ½ cup all-purpose flour
  • ½ cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ¼ cup cold butter, cut into pieces
  • ¼ cup chopped nuts (optional)

Instructions

  1. Prepare the Streusel Topping: Combine flour, brown sugar, cinnamon, and cold butter in a bowl. Use a fork or fingers to mix until crumbly. Add chopped nuts if using. Set aside.
  2. Mix the Wet Ingredients: In a large bowl, whisk together pumpkin puree, eggs, melted butter, vanilla extract, and brown sugar until smooth and well combined.
  3. Combine Dry Ingredients: In a separate bowl, sift together flour, cinnamon, nutmeg, baking soda, baking powder, and salt to evenly distribute the leavening agents and spices.
  4. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, folding gently until just combined to avoid overmixing and ensure tender muffins.
  5. Fill the Muffin Cups: Spoon the batter into a lined or greased muffin tin, filling each cup about two-thirds full. Generously sprinkle the streusel topping over each muffin.
  6. Bake and Cool: Bake at 350°F (175°C) for 18-22 minutes, or until a toothpick inserted in the center comes out clean. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
