Instructions

  1. Prepare the Cream Cheese Filling: In a small bowl, beat the softened cream cheese with powdered sugar and a splash of milk until smooth and creamy. Set aside.
  2. Mix Dry Ingredients: In a large bowl, whisk together all-purpose flour, brown sugar, pumpkin pie spice, baking powder, and baking soda until evenly combined.
  3. Combine Wet Ingredients: In another bowl, beat the eggs, pumpkin puree, vegetable oil, and vanilla extract until smooth.
  4. Blend Wet and Dry Mixtures: Gradually add the dry ingredients into the wet mixture, stirring gently just until combined to avoid overmixing which can make the muffins tough.
