Ingredients

Scale

Beef and Vegetables

  • 8 oz thinly sliced ribeye or sirloin steak strips
  • 1/2 cup green bell pepper, sliced
  • 1/2 cup red bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced

Cheese

  • 6 slices provolone or American cheese

Pasta and Seasonings

  • 8 oz penne or rigatoni pasta
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 tsp smoked paprika or Italian herbs (optional)

Instructions

  1. Prepare the Steak and Vegetables: Heat butter and olive oil in a skillet over medium-high heat. Add the thin steak strips and cook until browned but still tender. Remove the beef and set aside. In the same pan, sauté the sliced bell peppers, onions, and minced garlic until soft and slightly caramelized.
  2. Cook the Pasta: While the vegetables are cooking, boil the pasta in salted water according to package instructions until al dente. Drain well, reserving a little pasta water to help blend the sauce later on.
  3. Combine Ingredients: Return the cooked steak to the skillet with the sautéed vegetables and stir to combine. Add the cooked pasta and toss thoroughly so all flavors meld. Add a splash of reserved pasta water if the mixture seems dry.
  4. Melt the Cheese: Lay slices of provolone or chosen cheese evenly over the pasta and meat mixture. Cover the skillet with a lid and let it sit for a few minutes until the cheese melts into a gooey coating that wraps the pasta and filling.
  5. Serve and Enjoy: Stir the melted cheese gently into the mixture, adjust seasoning if needed, and serve hot directly from the skillet for maximum comfort and flavor.

Notes

  • Use thin steak slices to ensure quick cooking and tender texture.
  • Caramelize onions slowly for a sweeter, richer flavor.
  • Reserve some pasta water to keep the dish moist and help bind ingredients.
  • Cook in batches if the skillet is crowded to maintain proper browning and flavor.
  • Choose melting cheeses like provolone or American cheese for authentic cheesesteak effect.
