Ingredients

Scale

Protein and Vegetables

  • 1 lb ribeye or sirloin steak, thinly sliced
  • 1 cup mixed bell peppers (green, red, yellow), sliced
  • 1 medium onion, thinly sliced

Pasta

  • 12 oz penne or rigatoni pasta

Cheese Blend

  • 1 cup shredded mozzarella cheese
  • 1 cup shredded provolone or cheddar cheese

Sauce Ingredients

  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup sour cream or cream cheese
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp Italian herbs (oregano, basil, thyme)

Instructions

  1. Prepare the Ingredients: Preheat your oven to 375°F (190°C). Cook the pasta until just al dente according to package instructions. While pasta cooks, thinly slice the steak, bell peppers, and onion so they are ready for sautéing.
  2. Sauté the Steak and Veggies: Heat a large skillet over medium-high heat. Quickly cook the beef strips until browned but still juicy, about 2-3 minutes, then remove and set aside. In the same pan, sauté onions and bell peppers until tender and caramelized, about 5-7 minutes.
  3. Prepare the Sauce: Using the drippings in the skillet, add minced garlic and sauté briefly until fragrant. Pour in the beef broth and allow it to reduce slightly. Stir in sour cream or cream cheese until the sauce is creamy and smooth. Season with salt, black pepper, and Italian herbs to taste.
  4. Combine and Assemble: In a large mixing bowl, combine the cooked pasta, sautéed steak, peppers, onions, and creamy sauce. Mix thoroughly to coat everything evenly. Transfer the mixture to a greased baking dish and sprinkle the cheese blend evenly over the top.
  5. Bake Until Golden and Bubbling: Place the baking dish in the oven and bake for 20-25 minutes, or until the cheese is melted, bubbly, and golden brown on top. Remove from oven and let rest for a few minutes before serving.

Notes

  • Choose thin slices of ribeye or sirloin steak for tenderness and quick cooking.
  • Cook pasta al dente to avoid over-softness after baking.
  • Take your time caramelizing onions and peppers to bring out natural sweetness.
  • Use quality beef broth and fresh garlic to deepen sauce flavor.
  • Mix different cheeses for the perfect balance of meltiness and sharpness.
  • To make gluten-free, use certified gluten-free pasta and check all other ingredients for gluten content.
