Ingredients

Scale

Main Ingredients

  • 1 lb ground beef (80/20 for tenderness and flavor)
  • 1 cup shredded pepperjack cheese
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, finely chopped
  • 1 tbsp Worcestershire sauce
  • 1/4 cup milk
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/4 tsp ground cumin
  • 2 tbsp fresh parsley, chopped

Variations (Optional)

  • 12 diced jalapeños for extra heat
  • Use 1 lb ground turkey or chicken instead of beef
  • Gluten-free breadcrumbs or 1/2 cup almond flour for gluten-free version
  • Smoked gouda instead of pepperjack cheese
  • 1/2 cup finely grated carrots or zucchini for veggie boost

Instructions

  1. Prepare the Ingredients: Finely chop the onion, garlic, and fresh parsley. Shred the pepperjack cheese and set aside. Preheat the oven to 350°F (175°C) to prepare for baking.
  2. Mix the Meatloaf Base: In a large bowl, combine ground beef, breadcrumbs, chopped onion and garlic, Worcestershire sauce, milk, and the egg. Add smoked paprika, black pepper, and cumin. Mix gently but thoroughly using your hands or a spoon to combine all ingredients evenly without overworking.
  3. Add the Cheese: Fold the shredded pepperjack cheese and chopped parsley into the meat mixture to evenly distribute the spicy cheesy flavor throughout the meatloaf.
  4. Shape and Bake: Transfer the mixture to a loaf pan, pressing gently to hold together without making it dense. Place in the preheated oven and bake for 55-60 minutes, or until the internal temperature reaches 160°F (71°C).
  5. Rest and Serve: Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This resting time allows the juices to redistribute, ensuring each slice remains moist and flavorful.

Notes

  • Don’t overmix the meat; mixing just until combined prevents a tough texture.
  • Shred the cheese finely to help it melt evenly throughout the meatloaf.
  • Use a meat thermometer to check doneness, aiming for an internal temperature of 160°F (71°C).
  • Allow the meatloaf to rest after baking to avoid crumbling slices.
  • Do not skip the milk or Worcestershire sauce as they add moisture and tenderness.
