This versatile and filling hash can be customized with different proteins and vegetables to suit your taste.

Ingredients

Scale

Vegetables

  • 3 medium russet potatoes, peeled and diced
  • 1 medium onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2 cloves garlic, minced

Protein

  • 8 oz smoked sausage or ground beef

Spices & Seasonings

  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • Salt, to taste
  • Black pepper, to taste

Fats

  • 2 tablespoons olive oil or butter

Garnish

  • Fresh cilantro or green onions, chopped, for finishing

Instructions

  1. Prepare the potatoes and vegetables: Start by peeling (optional) and dicing the russet potatoes into bite-sized pieces. Finely chop the onions and bell peppers to ensure even cooking alongside the potatoes.
  2. Brown the sausage or protein: Heat olive oil or butter in a large skillet over medium-high heat. Add the smoked sausage or ground beef and cook until nicely browned, breaking it up as it cooks.
  3. Sauté the veggies and spices: Push the meat to one side of the pan and add the onions and bell peppers. Cook until softened, then stir in minced garlic, chili powder, smoked paprika, salt, and black pepper, combining well to awaken the spices.
  4. Cook the potatoes: Add the diced potatoes to the skillet and stir to combine. Cover with a lid and cook for 10-15 minutes, stirring occasionally, until the potatoes are tender and edges are crispy.
  5. Finish and garnish: Remove the lid and cook a few more minutes if you want extra crispiness. Sprinkle fresh cilantro or green onions on top to finish with a bright, fresh note before serving.

Notes

  • Choose russet potatoes for best texture; Yukon golds can be used for a waxier finish.
  • Do not overcrowd the pan to allow potatoes to crisp rather than steam.
  • Stir gently and occasionally to maintain crispy edges.
  • Smoked sausage enhances authentic Texas-style flavor.
  • Adjust seasoning and spice levels to your preference at the end of cooking.
