One-Pan Sausage and Roasted Pepper Lasagne

One-Pan Sausage and Roasted Pepper Lasagne is an easy, flavor-packed dish that combines savory sausage, sweet roasted peppers, creamy cheeses, and tender no-boil lasagne noodles, all cooked in a single pan for minimal cleanup. Perfect for busy weeknights, this comforting lasagne delivers rich taste and texture with effortless preparation.

Ingredients

Sausage and Vegetables

  • Italian pork sausage (or turkey sausage) – 1 lb (450 g), casings removed
  • Roasted red peppers – 1 cup, chopped roughly
  • Minced garlic – 2 cloves
  • Olive oil – 2 tbsp

Lasagne and Cheese

  • No-boil lasagne sheets – 9 sheets (enough to layer 2-3 times depending on pan size)
  • Ricotta cheese – 1 cup
  • Shredded mozzarella cheese – 1 ½ cups
  • Grated Parmesan cheese – ½ cup plus extra for garnish

Sauce and Herbs

  • Tomato sauce – 2 cups
  • Fresh or dried basil – 1 tsp
  • Fresh or dried oregano – 1 tsp

Instructions

  1. Prepare the Sausage and Peppers: Heat olive oil in a large ovenproof skillet over medium heat. Remove sausage from casings and crumble into the pan. Cook until browned and cooked through, about 5-7 minutes. Add minced garlic and cook for another minute. Stir in chopped roasted red peppers, letting the flavors mingle.
  2. Add Tomato Sauce and Herbs: Pour in the tomato sauce and sprinkle in basil and oregano. Stir well to combine, then simmer for 5 minutes so the sauce thickens slightly.
  3. Layer the Lasagne Sheets and Cheese: Reduce heat to low. Arrange no-boil lasagne sheets evenly over the sausage mixture. Dollop spoonfuls of ricotta cheese over the surface, then sprinkle with shredded mozzarella and Parmesan. Repeat the layers if desired or if the pan allows.
  4. Cook the Lasagne: Cover the pan with a lid or foil and cook gently over low heat on the stove for 15-20 minutes, until noodles are tender and cheese is melted. For a golden top, transfer the pan to a preheated oven at 375°F (190°C) for an additional 5 minutes if oven-safe.
  5. Rest and Serve: Let the lasagne rest for 5 minutes to set before slicing and serving.

Notes

  • Use a deep, heavy skillet or oven-safe sauté pan to prevent spills and accommodate layers.
  • Roast fresh red peppers yourself for best flavor, or use jarred roasted peppers as a convenient alternative.
  • Keep lasagne layers thin to ensure even cooking and optimal texture.
  • Fresh basil and oregano greatly improve the taste compared to dried herbs.
  • Cook on low heat to allow noodles to cook through without burning the bottom layer.
  • You can customize this recipe with extra vegetables like zucchini, spinach, or eggplant, or swap sausage for mushrooms or lentils for a vegetarian option.
  • For a dairy-free version, substitute plant-based cheeses and omit ricotta.
