This classic one-pot meal offers warm, nostalgic flavors paired with balanced nutrition, making it perfect for cozy family dinners or meal prep.

Ingredients

Scale

Beef and Broth

  • 2 lbs beef chuck roast, cut into bite-sized cubes
  • 6 cups beef broth

Vegetables

  • 3 medium carrots, diced
  • 2 celery stalks, diced
  • 2 medium russet potatoes, peeled and cubed
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 cup fresh green beans, trimmed and cut into 1-inch pieces

Flavorings and Seasonings

  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • 2 bay leaves
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons cooking oil (for browning beef and sautéing vegetables)

Instructions

  1. Brown the beef: Cut your beef chuck into bite-sized cubes and sear them in a pot with a little oil until they develop a rich, brown crust. This step locks in flavor and gives the soup its hearty base.
  2. Sauté aromatics: Remove the beef and sauté diced onions, garlic, celery, and carrots in the same pot. This builds the soup’s aromatic foundation, layering gentle sweetness and earthiness.
  3. Deglaze and simmer: Add tomato paste and beef broth to deglaze the pot, scraping up all the browned bits for flavor. Return the beef to the pot, toss in potatoes, thyme, bay leaves, and season with salt and pepper.
  4. Cook low and slow: Let the soup simmer gently for at least 1.5 to 2 hours, allowing beef to become tender and vegetables to meld beautifully into the rich broth.
  5. Add green beans near the end: Stir in fresh green beans during the last 15 minutes so they stay bright and slightly crisp, adding a delightful contrast.

Notes

  • Brown the beef thoroughly to deepen the flavor.
  • Use fresh herbs if possible to elevate aroma and taste.
  • Cut vegetables uniformly for even cooking and presentation.
  • Simmer uncovered to reduce and thicken the broth slightly.
  • Adjust salt toward the end as broth can concentrate during cooking.
