Instructions

  1. Cook the Pasta: Start by boiling 2 cups of elbow macaroni in salted water until just al dente. The pasta should be tender but still have a slight bite, as it will cook further in the cheese sauce.
  2. Prepare the Roux: Melt 4 tablespoons of unsalted butter in a saucepan over medium heat. Whisk in 1/4 cup of all-purpose flour (or gluten-free flour) until the mixture forms a smooth paste. Continue cooking for 1 to 2 minutes while stirring constantly to remove the raw flour taste.
  3. Make the Cheese Sauce: Gradually add 3 cups of whole milk, whisking continuously to prevent lumps. Allow the sauce to thicken until it coats the back of a spoon. Remove from heat and stir in 2 1/2 cups shredded sharp cheddar cheese, 1/2 teaspoon mustard powder, salt, and pepper until fully melted and creamy.
  4. Combine Pasta and Sauce: Drain the cooked macaroni well and fold it into the cheese sauce, making sure every piece is thoroughly coated with the creamy cheese mixture.
