Layered Meatball Casserole

Layered Meatball Casserole is a hearty and comforting one-dish meal combining savory meatballs, rich marinara sauce, melted cheese, and perfectly cooked pasta or vegetables. Ideal for family dinners or casual gatherings, this casserole is flavorful, easy to customize, and convenient to prepare ahead of time.

Ingredients

Scale

Meatballs

  • 1 lb ground meat (beef, pork, turkey, or a blend)
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/2 cup finely chopped onion
  • 1 teaspoon Italian herbs (basil, oregano, parsley)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Base Layer (Pasta or Vegetables)

  • 8 oz pasta (gluten-free if needed) or 2 medium zucchinis or 1 medium eggplant, sliced
  • 1 tablespoon olive oil (for sautéing veggies)

Sauce and Cheese

  • 3 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese

Instructions

  1. Prepare the Meatballs: Mix the ground meat with breadcrumbs, egg, minced garlic, chopped onion, Italian herbs, salt, and pepper. Shape the mixture into bite-sized meatballs. Heat olive oil in a skillet over medium heat and lightly brown the meatballs to seal in juices and enhance flavor. Remove from heat and set aside.
  2. Cook the Base Ingredients: If using pasta, boil it until al dente, then drain. For vegetables like zucchini or eggplant, lightly sauté the slices in olive oil until tender but still firm. Set aside.
  3. Assemble the Layers: Lightly grease a casserole dish and spread a thin layer of marinara sauce to prevent sticking. Arrange the first layer of pasta or vegetables, then layer the browned meatballs, spoonfuls of sauce, and a generous sprinkle of cheese. Repeat layering until all ingredients are used, finishing with a thick, even layer of cheese on top.
  4. Bake to Perfection: Cover the casserole with foil and bake at 375°F (190°C) for about 25 minutes to meld flavors and warm through. Remove the foil and bake an additional 10 minutes or until the cheese is bubbly and golden brown.
  5. Rest Before Serving: Let the casserole rest for 5 to 10 minutes to allow the layers to set, making it easier to slice and serve without falling apart.

Notes

  • Do not overmix meatball ingredients to keep them tender.
  • Use fresh herbs like basil or parsley for brighter flavor.
  • Lightly grease the casserole dish for easy removal and cleanup.
  • Customize cheese blends by combining mozzarella with parmesan or romano for depth.
  • Keep casserole covered while baking to prevent drying.
  • Allow the casserole to rest before slicing for better layering.
