Ingredients

Scale

Fruits

  • 4 cups fresh ripe peaches, peeled and sliced
  • 1 tablespoon lemon juice

Dairy

  • 2 cups heavy cream
  • 1 cup whole milk

Sweeteners & Flavorings

  • 3/4 cup granulated sugar (adjustable to taste)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the Peaches: Peel and slice 4 cups of ripe peaches. Toss them with 1 tablespoon of lemon juice to brighten the flavor and prevent browning. Lightly mash or puree half of the peaches while leaving some chunks for texture.
  2. Mix the Base: In a bowl, combine 2 cups of heavy cream, 1 cup of whole milk, 3/4 cup sugar, 1 teaspoon vanilla extract, and a pinch of salt. Stir well until the sugar fully dissolves, creating a smooth cream base.
  3. Combine Peaches and Base: Fold the mashed and chopped peaches into the cream mixture gently, ensuring even distribution without over-mixing to keep the peach chunks intact.
  4. Chill the Mixture: Cover the mixture and refrigerate for at least 2 hours or overnight to allow flavors to meld and improve the ice cream texture.
  5. Churn the Ice Cream: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions, typically 20–30 minutes until it reaches a soft-serve consistency.
  6. Freeze Until Firm: Transfer the churned ice cream to a freezer-safe container and freeze for a minimum of 4 hours to develop a perfect scoopable texture.

Notes

  • Use peaches at their peak ripeness for the best flavor.
  • Always chill the cream base thoroughly before churning to achieve the creamiest texture.
  • Adjust the sugar level based on the natural sweetness of your peaches.
  • Adding a tablespoon of peach liqueur or bourbon can keep the ice cream softer.
  • Stop churning as soon as the mixture thickens to avoid a grainy texture.
