Instructions

  1. Prepare the Yeast: Dissolve the active dry yeast and 1 teaspoon of sugar in warm water. Let it sit for 5 to 10 minutes until frothy, indicating the yeast is active.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, sugar, salt, minced garlic, chopped rosemary, and chopped thyme. Stir thoroughly to evenly distribute the herbs and garlic.
  3. Combine Wet and Dry: Pour the frothy yeast mixture, melted butter, and warm milk into the dry ingredients. Mix until a sticky dough forms, then knead on a floured surface for 8 to 10 minutes until smooth and elastic.
  4. First Rise: Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and leave in a warm spot for 1 to 1½ hours until it doubles in size.
  5. Shape the Rolls: Punch down the risen dough gently. Divide it into 12 equal pieces, shape each into a ball, and place them spaced apart in a greased baking dish or sheet.
  6. Second Rise: Cover the shaped rolls and let them rise again for 30 to 45 minutes until puffy and soft.
  7. Bake: Preheat the oven to 375°F (190°C). Lightly brush the tops with melted butter and bake the rolls for 18 to 22 minutes until golden brown and fragrant. Allow to cool slightly before serving.
