Ingredients

Scale

Basic Ingredients

  • 1 cup full-fat cottage cheese
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 tablespoon olive oil

Optional Ingredients

  • 12 tablespoons fresh herbs (e.g. parsley, chives)

Instructions

  1. Prepare the Dough: In a medium bowl, combine cottage cheese, whole wheat flour, baking powder, salt, and olive oil. Stir the mixture until it forms a soft and sticky dough. Add fresh herbs if desired, folding them in gently to evenly incorporate.
  2. Rest the Dough: Let the dough rest for 10 minutes to allow the baking powder to activate and the ingredients to meld, improving the texture.
  3. Shape the Flatbreads: Divide the dough into 4 equal portions. Roll each portion out on a lightly floured surface into a flat circle about ¼ inch thick to prevent sticking.
  4. Cook the Flatbreads: Heat a non-stick skillet over medium heat. Cook each flatbread for 3 to 4 minutes on each side until golden brown spots appear and the flatbread is cooked through.
  5. Serve Warm: Serve the flatbreads immediately or keep them warm wrapped in a clean towel until ready to eat.

Notes

  • Use full-fat cottage cheese for richer texture and better dough consistency.
  • Mix the dough just until combined to keep flatbread soft and tender.
  • Preheat the skillet well to ensure even cooking and a nice crust.
  • Add fresh herbs last and fold them in gently to preserve their flavor.
  • Flatbreads taste best when served warm but can be reheated in a skillet or toaster oven.
