Ingredients

Scale

Main Ingredients

  • 4 skinless, boneless chicken breasts
  • 4 slices low-sodium ham
  • 4 slices Swiss cheese
  • 1/2 cup whole wheat breadcrumbs
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 2 tbsp Dijon mustard
  • 2 large eggs, beaten
  • 12 tbsp olive oil or cooking spray

Instructions

  1. Prepare the Chicken: Trim and flatten each chicken breast to about 1/2 inch thickness using a meat mallet or rolling pin to ensure even cooking and room to roll the filling inside.
  2. Layer the Filling: Spread a thin layer of Dijon mustard on each flattened chicken breast. Place one slice of ham and one slice of Swiss cheese on top of each.
  3. Roll and Secure: Carefully roll each chicken breast up around the filling, tucking in the sides to fully enclose the ham and cheese. Secure each roll with toothpicks as needed to hold its shape during cooking.
  4. Coat the Chicken Rolls: Dip each roll into the beaten eggs, then coat evenly with a mixture of whole wheat breadcrumbs, garlic powder, and black pepper for a crunchy and flavorful crust.
  5. Cook to Perfection: Lightly sear the rolls in a hot skillet with olive oil for a golden crust or place them in an oven-safe dish sprayed lightly with cooking spray. Bake at 375°F (190°C) for 25-30 minutes until the coating is golden and the chicken is cooked through.

Notes

  • Ensure chicken breasts are evenly pounded to prevent uneven cooking.
  • Use toothpicks securely to avoid filling leakage during cooking.
  • Allow the cooked rolls to rest for 5 minutes before slicing to retain juices.
  • Don’t overfill the chicken breasts to facilitate rolling and prevent bursting.
  • Baking instead of frying reduces fat but still achieves a crispy crust.
