  • Black pepper, to taste

Instructions

  1. Prepare the ingredients: Pit the green olives if needed. Rinse the capers under cold water to reduce excess salt. Peel the garlic cloves and roughly chop the fresh parsley to make blending easier.
  2. Combine in a food processor: Place the green olives, rinsed capers, garlic, parsley, and freshly squeezed lemon juice into the food processor. Pulse a few times to start breaking down the ingredients.
  3. Add olive oil and seasonings: With the motor running on low speed, gradually drizzle in the extra virgin olive oil until the tapenade reaches a smooth but slightly chunky consistency. Season with black pepper to taste and pulse briefly to combine.
  4. Taste and adjust: Stop the processor and taste your tapenade. Add additional lemon juice for more brightness or a few more capers or olives if you prefer more saltiness. Blend again if needed.
  5. Serve or store: Transfer the tapenade to a bowl or jar. Serve immediately at room temperature or refrigerate to allow flavors to deepen.
