Ingredients

Scale

Chicken and Potatoes

  • 4 bone-in, skin-on chicken thighs
  • 1.5 lbs baby potatoes, halved

Marinade and Seasoning

  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the marinade: In a large bowl, whisk together olive oil, minced garlic, Italian seasoning, salt, pepper, and grated Parmesan cheese. This mixture will coat the chicken and potatoes, infusing them with flavor and helping create a crispy, golden crust.
  2. Toss the potatoes: Add halved baby potatoes to the bowl and toss to fully coat them in the Parmesan-garlic mixture. This ensures the potatoes absorb the seasoning before roasting.
  3. Season the chicken: Pat the chicken thighs dry with paper towels to help them crisp up. Then, add them to the bowl and mix well so each piece is generously coated in the marinade.
  4. Arrange in the baking dish: Place the potatoes cut-side down in a single layer on a baking sheet or oven-safe dish. Nestle the chicken thighs skin-side up among the potatoes to allow even cooking.
  5. Roast to perfection: Bake in a preheated oven at 425°F (220°C) for 35-40 minutes until the chicken skin is crispy, the internal temperature reaches 165°F (74°C), and the potatoes are tender with golden edges.
  6. Garnish and serve: Sprinkle freshly chopped parsley over the finished dish for a burst of color and fresh flavor before serving piping hot.

Notes

  • Patting the chicken dry before marinating helps achieve extra crispy skin.
  • Cut potatoes into similar sizes for even roasting.
  • Use freshly grated Parmesan cheese for better melting and richer flavor.
  • Roast at high temperature to caramelize cheese and crisp potatoes perfectly.
  • Let chicken rest a few minutes after baking to keep juices locked in.
