Instructions

  1. Prepare the Ingredients: Wash and dice the potatoes into bite-sized pieces. Peel and slice the onions into thin strips. Slice the smoked Polish sausage into rounds or half-moons as preferred. Mince the garlic and have salt and pepper ready for seasoning.
  2. Cook the Potatoes: Heat olive oil in a large skillet over medium heat. Add the diced potatoes and spread them out evenly. Fry without stirring too often to allow a golden crust to form, cooking for about 10-12 minutes until potatoes are crispy on the outside and tender on the inside.
  3. Add Onions and Garlic: Push the potatoes to one side of the skillet. Add sliced onions and minced garlic to the empty space and sauté for 5-7 minutes until onions are soft and caramelized. Stir everything together to combine flavors.
  4. Incorporate the Smoked Polish Sausage: Add the sliced sausage to the skillet, stirring occasionally. Cook for an additional 5 minutes until the sausage is heated through and edges are slightly browned, imparting smoky richness.
  5. Season and Finish: Sprinkle salt and pepper evenly over the mixture. Taste and adjust seasoning as needed. If using fresh parsley, sprinkle it on top just before serving for a fresh, vibrant touch.
