Freezer Breakfast Burritos

Freezer breakfast burritos are a convenient and delicious solution for busy mornings. Made ahead with hearty ingredients like eggs, sausage or bacon, sautéed bell peppers and onions, and melty cheese wrapped in sturdy flour tortillas, these burritos freeze well and reheat quickly. Perfectly portioned and customizable, they save time, offer balanced nutrition, and appeal to the whole family for stress-free, flavorful breakfasts any day of the week.

Ingredients

Scale

Main Ingredients

  • Large flour tortillas (sturdy and flexible, quantity as needed)
  • 6 large eggs
  • 1 cup cooked breakfast sausage or bacon (or veggie sausage for vegetarian option)
  • 1 cup shredded cheese (Cheddar, Monterey Jack, or preferred variety)
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • Salt and pepper (to taste)
  • Salsa or hot sauce (optional, for serving or adding inside)

Instructions

  1. Prepare the Filling: Cook your chosen protein in a skillet over medium heat until browned and fully cooked. In the same or separate pan, sauté diced bell peppers and onions until tender and fragrant. In a bowl, whisk eggs with salt and pepper, then scramble gently in a non-stick pan until softly set.
  2. Assemble the Burritos: Lay out tortillas on a clean surface. Evenly distribute scrambled eggs, cooked sausage or bacon, sautéed veggies, and shredded cheese in the center of each tortilla. Add salsa or hot sauce if desired. Fold in the sides and roll up tightly into burritos.
  3. Wrap and Freeze: Wrap each burrito tightly in foil or plastic wrap to prevent freezer burn. Place wrapped burritos in a large freezer-safe zip-top bag or airtight container. Label with the date for easy tracking.
  4. Reheat and Enjoy: When ready to eat, unwrap the burrito and microwave on high for 2-3 minutes or until heated through. Alternatively, bake wrapped in foil at 350°F for 20-25 minutes. Optionally, for a crispier tortilla, heat the burrito in a skillet over medium heat for a few minutes after microwaving.

Notes

  • Don’t overfill the burritos to avoid tearing during rolling or reheating.
  • Let cooked ingredients cool before assembling to prevent sogginess.
  • Use sturdy flour tortillas for best texture in the freezer.
  • Double wrap burritos in foil and plastic wrap for optimal freshness and to prevent freezer burn.
  • Label bags with date and contents for easy freezer organization.
  • For gluten-free versions, use gluten-free tortillas and verify all other ingredients are gluten-free.
  • Egg substitutes like egg whites, vegan replacers, or tofu scramble can be used without sacrificing flavor.
