Ingredients

Main Ingredients

  • Canned Tuna (5 oz can), drained thoroughly
  • Bread Crumbs (1/2 cup, use gluten-free if needed)
  • Egg (1 large)
  • Green Onions (2, finely chopped)
  • Jalapeño (1 small, finely chopped) or 1/2 tsp Red Pepper Flakes
  • Mayonnaise (2 tbsp)
  • Lime Juice (1 tbsp, freshly squeezed)
  • Garlic Powder (1/2 tsp)
  • Salt (1/2 tsp)
  • Black Pepper (1/4 tsp)
  • Olive Oil or Butter (2 tbsp for frying)

Optional Variations

  • Fresh Tuna chunks (substitute for canned tuna)
  • Mash Chickpeas or Jackfruit (for vegan option)
  • Flaxseed meal (1 tbsp mixed with 3 tbsp water, as egg substitute for vegan option)
  • Bell Peppers (in place of jalapeño for milder heat)
  • Cayenne Pepper (to increase heat)
  • Fresh Cilantro, Parsley, or Dill (1-2 tbsp chopped)
  • Shredded Cheddar or Pepper Jack Cheese (1/4 cup)

Instructions

  1. Prepare the Tuna Mixture: Drain the canned tuna thoroughly to avoid excess moisture. In a bowl, break up the tuna and add finely chopped green onions, jalapeño or red pepper flakes, mayonnaise, lime juice, garlic powder, salt, and black pepper. Mix thoroughly until all ingredients are evenly combined.
  2. Incorporate Bindings: Crack the egg into the bowl and gradually add bread crumbs. Stir gently until the mixture holds together well but remains slightly moist. The mixture should be firm enough to shape into patties.
  3. Shape the Cakes: Using your hands, form the mixture into medium-sized patties approximately 2-3 inches in diameter. Ensure the patties are uniform in size for even cooking.
  4. Cook to Golden Perfection: Heat olive oil or butter in a skillet over medium heat. Carefully place the tuna cakes in the skillet and cook for 3-4 minutes on each side until a golden-brown crust forms and the inside is heated through.

Notes

  • Drain Tuna Well: Excess moisture can cause cakes to fall apart, so ensure thorough draining.
  • Don’t Overmix: Mix just until combined to maintain a tender texture.
  • Chill Before Cooking: Refrigerate patties for 15 minutes to help them hold their shape during cooking.
  • Use Fresh Spices: Fresh jalapeño or high-quality red pepper flakes add vibrant heat.
  • Adjust Consistency: If the mixture is too wet, add bread crumbs sparingly to achieve the right firmness.
