Scale

Main Ingredients

  • 68 medium-large fresh carrots
  • 2 tablespoons olive oil
  • 2 cloves fresh garlic, minced
  • 1 teaspoon fresh thyme or parsley, chopped (or your choice of fresh herbs)
  • Salt, to taste
  • Black pepper, to taste

Optional Ingredients

  • 1 tablespoon fresh lemon juice or 1 teaspoon lemon zest
  • Pinch of red pepper flakes or cayenne (for spicy kick)
  • 1 teaspoon honey or maple syrup (for sweet touch)
  • Toasted pine nuts or walnuts, for garnish
  • Vegan butter substitute such as coconut oil or vegan margarine

Instructions

  1. Prepare and Boil the Carrots: Start by washing the carrots thoroughly and trimming the ends. Boil them in salted water until tender—about 15 to 20 minutes—so they’re soft enough to smash but still hold their shape.
  2. Smash the Carrots: Drain the carrots and place them on a flat surface. Use the bottom of a glass or a potato masher to gently press and flatten each carrot piece, creating a rustic, smashed texture without turning them into puree.
  3. Season and Roast: Preheat your oven to 425°F (220°C). Toss the smashed carrots with olive oil, minced garlic, salt, pepper, and your choice of herbs. Spread evenly on a baking sheet and roast for 15 to 20 minutes until golden and slightly caramelized.
  4. Add Final Touches: Once roasted, remove the carrots and finish with a squeeze of fresh lemon juice or sprinkle lemon zest to brighten the flavors just before serving. Optionally, garnish with toasted nuts or additional herbs as desired.

Notes

  • Choose uniform-sized carrots to ensure even cooking and consistent smashing.
  • Don’t over-smash the carrots; keep some texture for a satisfying bite and rustic appearance.
  • Roast at a high temperature (425°F) to achieve perfect caramelization and deepen sweetness.
  • Use fresh herbs like thyme or parsley for the best flavor; dried herbs won’t provide the same freshness.
  • Serve the carrots warm, right from the oven or slightly cooled for best taste and texture.
