Ingredients

Scale

Protein

  • 1.5 to 2 lbs boneless chicken breasts or thighs

Vegetables & Aromatics

  • 1 medium onion, diced
  • 23 cloves garlic, minced
  • 1 to 2 cups corn kernels (fresh, canned, or frozen)
  • Optional: 1/2 cup diced carrots
  • Optional: 1/2 cup diced celery

Liquids & Dairy

  • 4 cups chicken broth or stock
  • 1 cup heavy cream or coconut milk

Fats & Seasonings

  • 2 tablespoons butter
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon dried thyme

Instructions

  1. Prepare the Ingredients: Dice the onion, mince the garlic, and chop any optional vegetables you wish to include. If using fresh corn, cut the kernels off the cob. Gather your chicken, broth, and other ingredients for easy assembly.
  2. Load the Slow Cooker: Place the chicken breasts or thighs at the bottom of your slow cooker. Layer the diced onion, minced garlic, corn kernels, and any optional vegetables on top. Pour in the chicken broth, season with salt, pepper, and thyme, then add a pat of butter for richness.
  3. Cook Low and Slow: Set your slow cooker to low and cook for 6 to 7 hours, or switch to high and cook for 3 to 4 hours, until the chicken is tender and easily shreddable. This slow cooking process allows the flavors to fully develop without needing to watch the pot.
  4. Shred the Chicken and Add Cream: Once cooked, use two forks to shred the chicken directly in the slow cooker. Stir in the heavy cream or coconut milk and allow the soup to heat through for an additional 10 to 15 minutes, blending the creamy texture with the savory flavors.
  5. Taste and Adjust Seasonings: Give your soup a final taste and add more salt, pepper, or herbs as desired. This ensures every spoonful has balanced and delicious flavor.

Notes

  • Use boneless, skinless chicken thighs for juicier, more tender meat.
  • Don’t skip the slow cook step; it softens the corn and deepens flavor.
  • Stir occasionally if possible, especially if using high heat, to prevent sticking.
  • For thicker soup, add a cornstarch and water slurry toward the end and cook until slightly thickened.
  • Add fresh herbs just before serving to preserve their bright aroma and flavor.
