Ingredients

Scale

Main Ingredients

  • 200g good quality dark chocolate (60-70% cocoa)
  • 150g unsalted butter, room temperature
  • 200g granulated sugar
  • 150g all-purpose flour (or gluten-free flour blend for gluten-free)
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 100g fresh pistachios, shelled and chopped
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Prepare the Pistachios: Toast the pistachios lightly in a dry pan over medium heat until they release their aroma and turn slightly golden. Allow them to cool, then chop roughly to maintain some crunch.
  2. Melt the Chocolate and Butter: Using a double boiler or microwave on low power, gently melt the dark chocolate and unsalted butter together until smooth and glossy. Stir frequently to ensure an even texture.
  3. Mix Eggs and Sugar: In a separate bowl, whisk the eggs and granulated sugar until the mixture becomes pale and slightly thickened. This aeration helps create a moist cake.
  4. Combine Wet Ingredients: Slowly fold the melted chocolate and butter mixture into the egg mixture, mixing gently until fully integrated and smooth.
  5. Add Dry Ingredients: Sift together the flour, baking powder, and salt. Gradually fold these dry ingredients into the wet mixture, taking care to maintain airiness without overmixing.
  6. Incorporate Pistachios: Fold in half of the chopped pistachios into the batter, reserving the remaining pistachios for topping the cake.
  7. Bake: Pour the batter into a greased and lined baking pan. Sprinkle the remaining pistachios evenly on top. Bake in a preheated oven at 350°F (175°C) for 30 to 35 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
  8. Cool and Serve: Allow the cake to cool completely in the pan before slicing to ensure the best texture and ease of handling.

Notes

  • Use room temperature eggs and butter for better mixing and lighter texture.
  • Choose high-quality dark chocolate for the richest flavor.
  • Fold ingredients gently to keep the cake tender and avoid a dense crumb.
  • Toast pistachios carefully to avoid burning and maintain crunch.
  • Use a toothpick test to prevent overbaking and retain moistness.
