Ingredients

Scale

Protein

  • 23 chicken breasts or thighs (bone-in optional for extra flavor)

Vegetables

  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 medium onion, chopped
  • 23 cloves garlic, minced
  • Optional: spinach, kale, or peas for extra vegetables

Liquid and Dairy

  • 6 cups chicken broth
  • 1 cup heavy cream or half-and-half (or coconut milk for dairy-free version)

Pasta

  • 2 cups egg noodles (or gluten-free pasta / zucchini noodles for gluten-free)

Herbs and Seasonings

  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Fresh thyme or parsley, chopped (for garnish and freshness)
  • Optional: red pepper flakes or diced jalapeños for spice

Instructions

  1. Prepare the Vegetables and Chicken: Chop carrots, celery, and onion into bite-sized pieces. Place them in the crockpot along with minced garlic and chicken pieces, left whole for shredding later.
  2. Add the Broth and Seasonings: Pour in the chicken broth. Sprinkle salt, pepper, and paprika over the ingredients. Stir lightly to combine and start flavor melding.
  3. Cook on Low: Set the crockpot to low heat and cook for 6-7 hours, or on high for 3-4 hours, allowing the chicken to tenderize and vegetables to soften.
  4. Shred the Chicken: Remove the chicken pieces, shred them using two forks, then return the shredded chicken to the crockpot and mix well.
  5. Add Cream and Noodles: Pour in the heavy cream or half-and-half followed by the egg noodles. Stir, cover the crockpot, and cook on high for an additional 15-20 minutes until noodles are tender yet firm.
  6. Final Touches: Stir in fresh herbs like parsley or thyme, adjust seasoning with salt and pepper if needed, and give the soup a gentle final stir before serving.

Notes

  • Use bone-in chicken for extra broth flavor.
  • Add noodles at the end to prevent mushiness.
  • For thicker soup, stir in a cornstarch or flour slurry before adding noodles.
  • Add fresh herbs at the end to preserve vibrant flavor; dried herbs can become bitter when cooked long.
  • Roasting garlic beforehand can enhance savory depth.
