Instructions

  1. Prep the Chicken: Trim any excess fat from the boneless chicken thighs or breasts, then cut them into bite-sized pieces for even cooking and better sauce absorption.
  2. Mix the Sauce: In a bowl, whisk together the soy sauce, honey or brown sugar, minced garlic, grated ginger, rice vinegar, and sesame oil until smooth and well combined to form a flavorful sauce base.
  3. Combine Ingredients in the Crock Pot: Place the chicken pieces into the crock pot, pour the sauce mixture over them, and toss to coat all pieces evenly.
  4. Cook Low and Slow: Cover and cook on low for about 4 hours or on high for 2 to 3 hours until the chicken is tender and fully cooked.
  5. Thicken the Sauce: Before serving, mix cornstarch with cold water to form a slurry, stir it into the crock pot, and cook on high for an additional 10 to 15 minutes until the sauce thickens into a glossy glaze.
