Ingredients

Scale

Meat

  • 1 (3 to 4 lb) corned beef brisket

Vegetables

  • 4 large carrots, peeled and chopped into large chunks
  • 4 medium potatoes, peeled and chopped into large chunks
  • 1 medium onion, peeled and chopped into large chunks
  • 1/2 head cabbage, chopped

Seasonings & Liquids

  • 3 to 4 garlic cloves, peeled
  • 2 to 3 cups beef broth or water (enough to cover at least halfway up the meat)
  • 1 to 2 tablespoons pickling spices (bay leaves, coriander seeds, peppercorns, etc.)

Instructions

  1. Prepare the Ingredients: Rinse the corned beef under cold water to remove excess brine, then pat dry. Peel and chop your vegetables into large chunks to ensure even cooking.
  2. Layer in the Crock Pot: Place potatoes, carrots, and onions at the bottom of the slow cooker. Nestle the corned beef brisket on top with the fat side up to keep it juicy during cooking.
  3. Add Seasonings and Broth: Sprinkle the pickling spices and garlic cloves over the meat. Pour beef broth or water into the pot, covering at least halfway up the corned beef.
  4. Slow Cook to Perfection: Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours until the beef is tender and easily slices with a fork.
  5. Add Cabbage: During the last hour of cooking, add the chopped cabbage on top so it steams with the flavors but remains tender without becoming mushy.
  6. Serve and Enjoy: Carefully remove the meat and vegetables, slice the beef against the grain, and plate alongside the tender veggies. Spoon some cooking liquid over everything for extra moisture and flavor.

Notes

  • Rinse the brisket to reduce excess saltiness for balanced flavor.
  • Place the brisket fat side up to maintain moisture while cooking.
  • Layer denser vegetables at the bottom to ensure even cooking and prevent sogginess.
  • Don’t skip pickling spices—they are essential for authentic corned beef flavor.
  • Add cabbage in the last hour to avoid overcooking and mushiness.
