Ingredients

Scale

Protein

  • 4 boneless, skinless chicken breasts or thighs

Stuffing & Gravy Base

  • 1 package stuffing mix (6 oz)
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup chicken broth

Seasonings

  • 1 tsp dried sage
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and black pepper to taste

Fats

  • 3 tbsp butter, cut into small pieces

Instructions

  1. Prepare the Chicken: Season the chicken breasts or thighs generously with salt, pepper, and a pinch of dried herbs such as sage, thyme, and rosemary. This will infuse the chicken with flavor as it slow cooks.
  2. Mix the Gravy Base: In a bowl, combine the condensed cream of mushroom soup, chicken broth, onion powder, garlic powder, and additional dried herbs if desired. Stir well until smooth and richly flavored.
  3. Layer the Ingredients in the Crock Pot: Place the seasoned chicken at the bottom of the Crock Pot. Pour the prepared gravy mixture evenly over the chicken. Sprinkle the stuffing mix carefully over the top, avoiding stirring to maintain texture.
  4. Add Butter and Cook: Dot the stuffing evenly with small pieces of butter to add richness and moisture. Cover the Crock Pot, then cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and stuffing has absorbed the flavorful juices.
  5. Finish and Serve: Once cooking is complete, fluff the stuffing slightly to separate the grains and ensure the gravy is thick and hearty. Serve warm with extra gravy if desired and garnish with fresh parsley or thyme.

Notes

  • Use chicken thighs for more flavor and moisture.
  • Do not over-stir the stuffing to maintain a perfect texture and avoid sogginess.
  • Layer chicken first so it absorbs broth and soup flavors directly.
  • Add fresh herbs before serving to boost flavor, as fresh herbs fade during long cooking.
  • If stuffing seems dry during cooking, add a splash of more chicken broth.
  • For a vegetarian version, replace chicken with mushrooms or plant-based meat substitutes.
  • Use gluten-free stuffing mix and certified gluten-free broth and soup for a gluten-free variation.
  • Add chopped carrots, celery, or green beans for extra veggies.
  • For a spicy kick, add cayenne pepper or smoked paprika.
  • Stir in shredded cheddar or Parmesan cheese before serving for a cheesy twist.
