Ingredients

Scale

Filling Ingredients

  • 2 cups cooked shredded chicken (rotisserie or leftover baked chicken recommended)
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped fresh cilantro
  • 1 cup shredded cheddar cheese

Taquito Wrapping and Cooking

  • 12 small corn tortillas
  • Vegetable oil, for shallow frying (about 1 cup)

Optional Toppings and Garnishes

  • Sour cream or avocado
  • Guacamole
  • Salsa
  • Chopped cilantro
  • Queso fresco
  • Lime wedges

Instructions

  1. Prepare the Chicken Filling: Shred the cooked chicken and combine it in a bowl with chili powder, cumin, garlic powder, paprika, lime juice, and chopped cilantro. Stir in the shredded cheddar cheese until the mixture is well combined and binding.
  2. Warm the Tortillas: Gently heat the corn tortillas on a dry skillet over medium heat or microwave them wrapped in a damp towel. This makes them pliable and prevents cracking when rolling.
  3. Assemble the Taquitos: Spoon about two tablespoons of the chicken filling onto each warm tortilla. Roll the tortilla tightly around the filling, securing it completely. Place each rolled taquito seam side down to prevent unrolling during cooking. If needed, use a little water or beaten egg to seal the edges.
  4. Fry to Crispy Perfection: Heat vegetable oil in a large skillet over medium heat. Carefully add taquitos in batches, shallow frying for 2 to 3 minutes per side, until they are golden brown and crisp. Remove and drain on paper towels to absorb excess oil.
  5. Serve and Enjoy: Serve the taquitos hot with your favorite dipping sauces such as sour cream, guacamole, or salsa. Garnish with chopped cilantro, a squeeze of lime, or queso fresco for added flavor.

Notes

  • Don’t overfill the tortillas to prevent cracking and make rolling easier.
  • Seal the edges of the tortillas with a little water or beaten egg to keep filling inside while frying.
  • Maintain medium heat to ensure even cooking and reduce oil absorption.
  • Use fresh, pliable corn tortillas to avoid cracking or breaking during rolling.
  • Serve the taquitos immediately after frying for the crispiest texture.
