  • 3 lbs Russet potatoes, peeled and cut into chunks
  • 4 tablespoons butter
  • 1 cup warm milk or cream

Topping

  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs (or gluten-free breadcrumbs)
  • 3 tablespoons melted butter
  • Optional: 1 teaspoon fresh thyme or parsley, chopped

Instructions

  1. Prepare the Mashed Potatoes: Peel and cut the potatoes into even chunks. Boil them in salted water until fork-tender. Drain well, then mash with butter, warm milk, salt, and pepper until creamy and fluffy. Set aside while preparing the chicken.
  2. Crisp the Chicken: Pat chicken pieces dry thoroughly, then season generously with salt, pepper, minced garlic, and your choice of herbs. Heat oil in a skillet and sear the chicken skin-side down until golden and crispy. Finish cooking the chicken through in the oven or by continuing to fry until fully cooked inside.
  3. Assemble the Casserole: Grease a baking dish. Spread an even layer of mashed potatoes on the bottom. Arrange the crispy chicken pieces on top in a single layer. Sprinkle shredded cheddar and Parmesan cheese over the chicken. Mix breadcrumbs with melted butter and herbs if desired, then evenly spread this mixture over the cheese layer to form a crunchy topping.
