Instructions

  1. Prepare the Cake Batter: Whisk together the eggs and granulated sugar until thick and pale. Stir in pumpkin puree and vanilla extract until fully combined. In another bowl, sift together flour, baking powder, baking soda, cinnamon, nutmeg, and cloves for even flavor. Gently fold the dry ingredients into the wet ingredients without overmixing to keep the cake light and tender.
  2. Bake and Roll the Cake: Pour the batter evenly into a prepared jelly roll pan lined with parchment paper. Bake at 350°F (175°C) for about 15 minutes or until the cake springs back when lightly touched. While still warm, invert the cake onto a kitchen towel dusted with powdered sugar, then gently roll the cake and towel together. Let it cool completely in the rolled shape.
