  • 250g Mascarpone cheese (room temperature)
  • 150g Dark chocolate
  • 200ml Heavy cream
  • 75g Sugar
  • 3 Egg yolks
  • 2 tsp Gelatin powder (about 7g)
  • 1 tsp Vanilla extract
  • 1 tbsp Cocoa powder (optional, for dusting)

Instructions

  1. Prepare the Gelatin: Soften the gelatin powder in cold water for a few minutes until it blooms. Then gently dissolve it over a double boiler or in short bursts in the microwave with a little water, ensuring it is smooth and fully liquid for easy incorporation.
  2. Whip the Cream: In a chilled bowl, whip the heavy cream until soft peaks form. This lightens the mascarpone and adds an airy texture essential to the dome’s lightness.
  3. Mix Mascarpone and Sugar: In a separate bowl, combine the room temperature mascarpone cheese, sugar, vanilla extract, and egg yolks. Whisk until smooth and creamy, being careful not to overmix to maintain a soft texture.
  4. Melt the Chocolate: Gently melt the dark chocolate using a double boiler method. Let it cool slightly before folding it into the mascarpone mixture to prevent curdling.
  5. Combine All Components: Slowly fold the melted chocolate and dissolved gelatin into the mascarpone mixture. Then gently fold in the whipped cream using a spatula, preserving as much air as possible to maintain lightness.
  6. Mold and Chill: Pour the mixture into a dome-shaped mold or silicone hemisphere. Tap the mold gently to remove air bubbles and smooth the surface. Refrigerate for at least 4 hours or overnight to set firmly.
  7. Unmold and Serve: Carefully remove the set dome from the mold. If needed, briefly run warm water over the outside of the mold to loosen the dome for easier release. Place onto a serving plate and garnish as desired.

  • Use room temperature mascarpone for smooth mixing and to avoid lumps.
  • Do not overwhip cream; soft peaks are ideal to keep a light texture.
  • Allow melted chocolate to cool before combining to prevent curdling or curd formation.
