Ingredients

Scale

Protein

  • 1.5 pounds boneless chicken thighs, cut into bite-sized pieces

Vegetables

  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 3 medium potatoes, peeled and cubed
  • 1 medium onion, diced
  • 3 cloves garlic, minced

Liquids & Sauces

  • 4 cups chicken broth (gluten-free)
  • 2 tablespoons tomato paste

Fats & Oils

  • 2 tablespoons olive oil

Herbs & Seasonings

  • 2 teaspoons fresh thyme leaves (or rosemary/bay leaves as variation)
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Salt and black pepper to taste

Instructions

  1. Prepare the Ingredients: Chop all vegetables—dice the onion, slice the carrots and celery, peel and cube the potatoes—and trim the chicken thighs into bite-sized pieces to ensure even cooking.
  2. Sauté the Base: Heat olive oil in a large pot over medium heat. Add diced onions and minced garlic, cooking until fragrant and translucent. Add the chicken pieces and brown lightly to lock in juices and enhance flavor.
  3. Build the Broth: Stir in the tomato paste, coating the chicken and vegetables. Pour in the chicken broth to create the flavorful liquid base for the stew.
  4. Add Vegetables and Simmer: Add the sliced carrots, celery, and cubed potatoes to the pot. Season with salt, pepper, and fresh thyme. Bring to a gentle boil, then reduce heat to a simmer. Cover and cook for at least 40 minutes until the chicken is tender and vegetables are soft.
  5. Final Touches: Taste the stew and adjust seasoning if necessary. Stir in chopped fresh parsley for brightness. Remove from heat and let the stew rest for a few minutes to allow the flavors to meld before serving.

Notes

  • Brown the chicken thoroughly to add extra depth of flavor.
  • For richer broth, optionally use bone-in chicken thighs.
  • Do not rush the simmering step; slow cooking improves tenderness and flavor melding.
  • If the stew is too thin, mash some cooked potatoes to thicken naturally.
  • Add delicate fresh herbs like parsley last to prevent bitterness.
